Recipe Ingredients for Homemade Muffin Mix

8 c flour
1 c. sugar
3/10 c. baking powder
1 T. salt
1 c. shortening
4 eggs
4 c. skim milk
24 oz. pineapple rings

Recipe Directions for Homemade Muffin Mix

  1. In a lg. bowl, combine flour, sugar, baking powder and salt. Cut in shortening until coarse crumbs. Store in airtight container in cool dry place or in freezer for up to 6 months. Yield: 4 batches.

  2. Combine mix and 1 egg and 1 c. milk plus 3/4 shredded cheddar cheese OR 1/2 c. raisins and 1/4 tsp. cinnamon OR 12 oz. pineapple rings.

  3. Bake at 425 for 15-20. Let stand for 10 min. before removing to a wire rack.
