Tomato based minestrone soup with 2 kinds of beans

Recipe Ingredients for homemade minestrone soup

1 tablespoon extra virgin olive oil
2 carrots
2 celery stalks
1/2 medium onion
19 oz white kidney beans
15 oz black beans
28 oz tomatoes

Recipe Directions for homemade minestrone soup

  1. Small dice carrots, celery and onion and sautee in olive oil until onion is slightly translucent.

  2. Add crushed tomatoes, cannelli beans and black beans and bring to a simmer.

  3. Simmer 2 hours until carrots are slightly soft, and soup has thickened.

  4. Salt and pepper to taste
