Recipe Ingredients for homemade minestrone soup

3 tbsp. olive oil
3 cloves garlic, minced
2 onions, chopped
2 cups celery, chopped
1 cup grated carrots
4 cups chicken stock
1 can chicken broth
4 cups tomato sauce
16 ounce kidney beans
16 ounce garbanzo beans
31 ounce cannellini beans
10 ounce frozen green beans
2 cups baby spinach
3 zucchinis, chopped
1 tsp. oregano
2 tsp. basil
1/4 tsp. salt

Recipe Directions for homemade minestrone soup

Heat the olive oil in a large stock pot. Sautee the garlic, then add onions, then celery and carrots, cooking each for 3-4 minutes. Season with salt, oregano, and basil. Drain and rinse beans. Add stock, broth, beans, zucchini, and simmer for 60 minutes or longer. Add spinach and simmer 10 minutes more.
