Delicious homemade minestrone, a better alternative to canned soups with too few veggies.

Recipe Ingredients for Homemade Minestrone

9 cloves Garlic
3 serving Extra Virgin Olive Oil
1 large Onions
5 large (7-1/4" to 8-1/2" long) Carrots
2 cup (8 fl oz) Soup, Chicken Broth Or Bouillon
2 cup (8 fl oz) Water
2 cup Tomato Products
2 cup Tomatoes, Red, Ripe
1 glass (3.5 fl oz) Wine, Table, Red
1 cup Select Light Red Kidney Beans
2 cups Spinach Baby
5 small Squash, Summer, Zucchini, Includes Skin
2 oz dry Whole Wheat Spirals

Recipe Directions for Homemade Minestrone

  1. In a large stock pot, over medium-low heat, heat olive oil and saute garlic for 2 to 3 minutes. Add onion and saute for 4 to 5 minutes. Add carrots, saute for 1 to 2 minutes.

  2. Add chicken broth, water and tomato sauce, bring to boil, stirring frequently. If desired add red wine at this point.

  3. Transfer to slow cooker and add kidney beans, green beans, spinach leaves, zucchini, oregano, basil, salt and pepper. Cook on high for 4-5 hours or low for 8-10.

  4. Fill a medium saucepan with water and bring to a boil. Add macaroni and cook until tender. Drain water and set aside.

  5. Once pasta is cooked and soup is heated through place 2 tablespoons cooked pasta into individual serving bowls.

  6. Ladle soup on top of pasta and sprinkle Parmesan cheese on top, if desired.
