Recipe Ingredients for Homemade Mayonnaise

2 egg yolks, large
2 tbsp fresh lemon juice or white vinegar
1/4 tsp salt
1 white pepper
1 cup vegetable oil

Recipe Directions for Homemade Mayonnaise

  1. whisk together egg yolks, lemon juice and salt and pepper until light.

  2. Add oil a drop at a time, whisking constantly until 1/3 is in, then add the rest being sure oil is blending well. If oil is not blending well, stop adding and whisk until it is, then finishing adding oil.

  3. It thickens as you whisk it.

  4. Makes 1 cup and will keep in refrigerator 2 days.
