Recipe Ingredients for Homemade Mayonnaise

1 cup Vegetable Oil, Canola
1 large Egg, Whole
0.33 tbsp Horseradish, Prepared
2 tsp Classic Dijon Mustard
3 Teaspoon Juice
1 tsp Pepper, Black
1/4 tsp Kosher Salt

Recipe Directions for Homemade Mayonnaise

Place all ingredients into a tall container. Using a stick blender, place the blendier into container all the way to the bottom. Turn on blender and while still running, slowly draw the blender up through the ingredients. The mayonnaise will emulsify as the blender moves. With blender still running, move it up and down to incorporate all oil. This also thickens the mayonnaise--the longer you move the blender through the mixture the thicker it gets. Make your mayo as thick as you like. Scrape off stick blender, cover mayo and refrigerate. Use within 3-4 days. Horseradish may be omitted, but it does add great flavor to the mayo. Is this diet? No, but it is fresh, you know what ingredients are in it, and you don't have so much that it will hang around who knows how long!! And this is quick to make--two minutes start to finish (from measuring through mixing). Namaste.
