Making your own mayo allows you to control the fat and calorie content, this is just a guideline, if you find a lower calories olive oil or any other high grade oil like walnut or sweet almond oil. using light olive oil takes out the oil taste.

Recipe Ingredients for Homemade Mayo

1 cup light olive oil
2 tbsp vinegar
1 egg yolk
1/8 tsp salt
1/4 c. water

Recipe Directions for Homemade Mayo

  1. combine egg yolk and vinegar in a bowl and whisk

  2. add oil very slowly in a stream while whisking vigorously. can also be done with a food processor.

  3. if it starts to look thick, add water to thin to desired consistency.

  4. if it never thickened, you may need to start over. if you catch this partway through the process, you may add another egg yolk.

  5. serve
