Yummy homemade mashed potatoes. My family eats a lot of potatoes so if you don't it would probably make more than 6 servings. Sour cream adds a VERY nice kick.

Recipe Ingredients for Homemade mashed potatoes

7 large russet potatoes
1/2 cup light sour cream
2 tbsp margarine
1/2 cup non-fat milk

Recipe Directions for Homemade mashed potatoes

  1. Peel and dice potatoes into 1-2 inch cubes. Boil until tender.

  2. Immediately (do NOT let potatoes cool or they will get gluey) pour in milk, sour cream, margarine, and milk.

  3. Beat until smooth or as smooth as you like. Over beating will create a mess though.
