Homemade Lentil Soup with Cauliflower and Potato

Recipe Ingredients for Homemade Lentil Soup

240 grams Lentils
140 grams Potatoes, Boiled
1/2 medium (2-1/2" dia) Onions
5 clove Garlic
0.33 head, small (4" dia) Cauliflower
4 serving Beef Stock, Home Made
4 fl oz Aquafina
1/8 tsp Salt
1/8 tsp Pepper, Black

Recipe Directions for Homemade Lentil Soup

  1. Boil 2/5 cup dried lentil in water to make 1 cup boiled lentil.

  2. Boil potatoes and cauliflower in 1/3 cup stock.

  3. Puree potatoes, cauliflower, and lentils with 2/3 cups of broth.

  4. Transfer to a pot, add remaining 3 cups broth and 1/2 cup water and bring to boil. Season with salt.
