Makes 4 1/2 servings



1 serving = 1 cup (used 300 g cooked lentils) (substituted 240 ml--one cup--of water with low sodium vegetable broth. Couldn't figure out how to add it correctly here, so I log it separately. It adds about 62mg of sodium per serving.)

Recipe Ingredients for Homemade Lentil Soup

300 g lentils
60 g carrot
60 g celery
94 g onion
1 clove garlic
123 g tomato
180 g spinach
1/4 tsp black pepper
2 tbs extra virgin olive oil
720 ml water

Recipe Directions for Homemade Lentil Soup

  1. 2/3 c dry lentils (1 1/3 c cooked)

  2. 1 medium carrot

  3. 1 large stalk celery

  4. 1 medium onion

  5. 1 clove garlic

  6. 1 medium tomato

  7. 1 cup frozen spinach

  8. 1/4 tsp black pepper

  9. 2 tbs evoo

  10. 2 cups water

  11. 1 cup low sodium vegetable broth

  12. Place the olive oil into a large pot and set over medium low heat. Once oil becomes fragrant, add the onion, garlic, carrot, and celery and sweat until the onions are translucent, approximately 8 minutes. Add the lentils, tomatoes, spinach and water/broth and stir to combine. Increase the heat to high and bring just to a boil. Reduce the heat to low, cover and cook at a low simmer until the lentils and carrots are tender, approximately 35 to 40 minutes. Add black pepper. Using a stick blender, puree to your preferred consistency (or mash some lentils against the side of the pot). Serve immediately.
