Recipe Ingredients for Homemade Lasagna

2 lbs. ground beef
1 yellow onion
3 cloves minced garlic
52 oz. of spaghetti sauce
15 oz diced tomatoes
2 t. Italian Seasoning
16 oz Lasagna noodles
32 oz. cottage cheese
6 cups (24 oz.) shredded mozzarella cheese, divided
3 eggs
2 T. dried parsley
1 1/2 t. salt
1/2 t. pepper

Recipe Directions for Homemade Lasagna

  1. Start boiling water and cook noodles according to package directions, when done spread noodles flat on foil to cool. Meanwhile, in very large skillet brown meat, onions, and garlic; drain. Return meat mixture to skillet and add spaghetti sauce, diced tomatoes, and Italian Seasoning. Cover sauce with lid and simmer for 10 min. Preheat oven to 350. In a very large bowl, stir together: cottage cheese, 4 cups of the shredded mozzarella cheese, eggs, parsley, salt and pepper. Prepare 2 glass 13x9x2 inch baking pans by spraying with non-stick spray. Spread 2 large ladles of sauce in each pan. Arrange 3 noodles over the sauce to complete a layer, then spread a generous portion of the cheese mixture over the noodles. Repeat this process (sauce, noodles, cheese) 2 more times in each pan for a total of 3 layers. Top with remaining sauce; then sprinkle 1 cup of the reserved shredded mozzarella cheese over each pan to complete last layer. Cover each pan with the foil you used to cool the noodles on. Bake 45 minutes then remove the foil and bake and additional 15 minutes uncovered until cheese on top is slightly browned. Let stand 10 minutes to set before cutting. Serves 8-12 per pan.

  2. If you make this a day ahead you can refrigerate it and bake it the next day. Add 15-20 minutes to the bake time since it is chilled.
