Recipe Ingredients for Homemade Italian Wedding Soup

1/2 lbs lean ground beef
1/2 cup bread crumbs
4 cups fresh spinach
4 cups chicken broth
2 tbs. olive oil
1 cup dry macaroni
1 cup chickpeas, garbanzo beans
1 large egg
1 small onion
4 cups water

Recipe Directions for Homemade Italian Wedding Soup

  1. mix ground beef, egg, bread crumbs, and seasonings (salt, pepper, garlic salt, red pepper, oregano, and parsley) and form into small balls

  2. add oil to pan and cook meatballs and 1/2 chopped onion until brown

  3. add chicken broth and water (4 cups). bring to a boil and add orzo

  4. after 20 minutes, add spinach and canned chickpeas

  5. season with salt and pepper to taste

  6. cook until spinach has wilted and pasta and meatballs are done
