This is a light, tasty version of toasted Muesli which you can adapt to your tastes, adding nuts and different seeds. Based on the 101 Cookbooks recipe adaptation from Michele Cranston's book Kitchen.

Recipe Ingredients for Homemade honey toasted muesli

2 1/2 cups rolled oats
1 cup rolled barley
1/2 cup rye
1/2 cup shredded coconut
1/4 cup sesame seeds
1/2 cup pumpkin seeds
1/4 cup flax seeds
1/2 cup honey
2 tbsp sunflower oil

Recipe Directions for Homemade honey toasted muesli

mix all dry ingredients in a bowl. gently heat oil and honey together until honey is liquid. add honey mixture to dry ingredients and coat thoroughly. spread mixture on a baking tray and toast in a pre-heated 150C oven for 30 minutes stirring, occasionally. Remove from oven and allow to cool. if you like you can add dried fruit, although i prefer to add fresh fruit and serve the muesli with yogurt. store in an airtight container.
