Recipe Ingredients for Homemade ham & tomato macaroni soup

125 oz water
2 c ham, diced
2 medium onions, chopped
6 medium carrots, chopped
5 stalks celery, chopped
1 large leek, chopped
1 c frozen peas
1 c frozen green beans
1 c frozen corn
29 oz diced tomatoes
1 c dry macaroni
2 tbsp pepper
1 1/2 potatoes, chopped

Recipe Directions for Homemade ham & tomato macaroni soup

  1. put all ingredients except for the macaroni into a large stock pot and bring to a boil. Allow to "soft" boil for about 20mins, then reduce heat and simmer for 2-3 hours. Once all veggies are tender, add the uncooked macaroni. Keep pot simmering until macaroni is cooked.

  2. I like to make this soup when I get home from work, it is finished cooking by the time I am ready to call it a day, and then the flavors get to sit together all night for the perfect soup the next day :)
