Homemade Granola with flax seeds, chopped pecans and dried cherries. 1 serving = 1/2 C

Recipe Ingredients for Homemade Granola

4 cups rolled oats
1/2 cup shredded coconut
2 tablespoons wheat flour
1 tablespoon ground cinnamon
1/4 c vegetable oil
1/4 c toasted sesame oil
3/4 c maple syrup
1 tablespoon vanilla extract
1/2 cup flax seeds
1 cup chopped pecans
1/4 lbs dried cherries

Recipe Directions for Homemade Granola

  1. Preheat oven to 325 degrees.

  2. Combine the oats, coconut, flour and cinnamon in a large bowl.

  3. Stir in vegetable oil, sesame oil, maple syrup and vanilla extract. Make sure all dry ingrediants are evenly coated.

  4. Spoon the mixture onto 2 medium cookie sheets that have been covered in parchment paper or lightly coated with oil to prevent granola from sticking. Bake at 325 for 10-15 minutes, or until the top is lightly browned.

  5. Remove the pan from the oven and turn the granola to ensure even baking. Bake an additional 10-15 minutes until the granola is uniformly browned, turning as necessary.

  6. Add the nuts and seeds and bake for 5-10 minutes. Keep a close eye, as nuts and seeds can turn bitter if overcooked! Remove from the oven and let it cool to room temperature.

  7. Add dried fruit and store in airtight container.
