Recipe Ingredients for Homemade Granola Bars

2 cups rolled oats
1 cup coconut
1 cup almonds, sliced
1/2 cup wheat germ, toasted
3 tbsp butter
2/3 cup honey
1/4 cup brown sugar
1 1/2 tsp vanilla extract
1/4 tsp kosher salt
1/2 cup dates, pitted, chopped
1/2 cup dried apricots, chopped
1/2 cup dried cranberries

Recipe Directions for Homemade Granola Bars

  1. Preheat oven to 350 F.

  2. Butter a 8" x 12" pan and line with parchment paper.

  3. Toss together oats, coconut, and almonds in a sheet pan. Cook 10-15 minutes, until lightly browned.

  4. Reduce the oven temperature to 300 F. Transfer the oat mixture into a large mixing bowl and toss in the wheat germ.

  5. In a small saucepan, heat butter, honey, brown sugar, salt, and vanilla over medium heat until boiling. Cook 1 minutes.

  6. Pour honey mixture over oat mixture. Add fruit. Stir well.

  7. Pour mixture into prepared pan. Push down evenly with moistened hands. Bake 25 to 30 minutes until light golden brown.

  8. Allow to cool at least 3 hours before cutting into squares.
