This is an old recipe that someone adapted from the Girl Scouts. I haven't tried to yet, but wanted to know the count for what was suppose to be a "Low Fat" recipe. Turns out pretty good for a diet.

Recipe Ingredients for Homemade Girl Scout Cookies: Lemon Coolers

1/2 cup butter
3/4 cup confectioner's sugar
2 tsp lemon extract
1 tsp vanilla
2 cups flour
1 tbsp cornstarch
1/4 tsp baking powder
1/4 tsp salt
4 tbsp milk

Recipe Directions for Homemade Girl Scout Cookies: Lemon Coolers

  1. In large bowl, cream together the butter and confectioner's sugar until smooth. Beat in lemon extract, vanilla extract. Sift in flour, cornstarch, baking powder and salt, mixing on low speed. Add in 3 tbsp milk and beat until mixture just comes together. Dough should be slightly stickly, but not wet.

  2. Shape dough into a large log about 1 1/2 in in diameter. Wrap in wax paper and chill in fridge for at least 1 1/2 hours. WHen ready to bake, preheat oven to 350F. Spray pan.

  3. Slice dough log down the middle to create two half circle logs. Lay logs with the flat side down and cut slices of dough that are a bit under 1/4 in thick (no more than a 1/4 in or they will turn soft).

  4. Bake for 9-12 minutes, until edges just begin to turn golden.

  5. Cool for 5 minutes on the baking sheet, then transfer to a wire rack.

  6. WHen cookies are cooling on the rack, dust with extra confectioner's sugar.

  7. Makes 3 1/2 to 4 dozen cookies. (I would make 40 cookies, 2 per serving)
