Recipe Directions for Homemade Eggplant Pizza

  1. mix honey, water, and yeast. allow to stand for 5 minutes.

  2. add to flour and 1 teaspoon of salt. kneed dough for 5 minutes. Divide into two and put in separate bowls with 1 teaspoon of olive oil. Allow to rise for 30 minutes.

  3. WHile dough is rising, chop and cook garlic with 2 teaspoons of olive oil. Add crushed tomatoes (with juice), salt, dried oregano, and sherry. Cook for 30 minutes, stirring occasionally.

  4. Assemble pizzas. Bake at 375-400 degrees for 15 minutes.
