Very good eggplant parm. Serve with garlic bread and a salad.

Recipe Ingredients for Homemade Eggplant Parm

3 eggs
1 eggplant
2 cups breadcrumbs
1 cup olive oil
24 oz tomato sauce
8 oz pitted black olives
1/2 cup red onion
1 3/4 cup mozzarella
3/4 cup flour

Recipe Directions for Homemade Eggplant Parm

  1. Chop onion. Add onion & olives to simmering tomato sauce.

  2. Thinly slice eggplant.

  3. Dip eggplant slice in flour.

  4. Dip eggplant slice in beat eggs.

  5. Dip eggplant slice in bread crumbs.

  6. Fry eggplant slice in oil, in pan on med-high.

  7. Put tomato sauce on bottom of baking pan.

  8. Place slices on tomato sauce, covering bottom of pan.

  9. Put a layer of sauce over slices.

  10. Put a layer of cheese over sauce.

  11. Repeat until all eggplant are used.

  12. Bake in over on 350 for 20 mins
