dark rye bread, feel free to reduce the salt , leave out the cocoa or substitute espresso powder. but as is this bread gets an A in nutrition and taste

Recipe Ingredients for homemade dark rye bread

2 cups nonfat milk
2 tbsp butter
1 tbsp salt
1 tbsp yeast
2 tbsp cocoa
1/4 cup brown sugar
1 cup rye flour
3 cups whole grain flour
1 1/2 cups flour

Recipe Directions for homemade dark rye bread

  1. use instant yeast

  2. heat milk and butter until 120-140 degrees

  3. put all other ingredients in stand mixer

  4. add milk

  5. mix together til smooth

  6. knead about 5 minutes

  7. rise once in bowl til doubled about 1 hour

  8. shape, put into loaf pans

  9. rise til double

  10. place in cold oven, turn on to 400degrees

  11. bake 15 min turn down to 350 bake 20-25 min til it sounds hollow when tapped on bottom
