Yummy, creamy, easy soup that will warm you up on a cold day. Wonderful when served with a slice of goat cheese in the centre and a few chives.

Recipe Ingredients for Homemade cream of mushroom soup

6 cups mushrooms
1 tbs garlic
3 tbs olive oil
1/4 cup cream cheese
2 1/2 cups low sodium chicken broth
1/2 cup scallions

Recipe Directions for Homemade cream of mushroom soup

Lightly sautée mushrooms (preferably portebello) with scallions, olive oil, and garlic. When not quite cooked, but starting to show signs of softness, place in a soup pot with chicken broth and bring to a slight boil. Let cook for about 15 minutes and then remove from head. With a hand blender (or a normal blender) start to purée the mixture. Add the creamcheese and continue to blend. Add a little pepper and parsley to taste.
