Made from homemade chicken stock (chicken bones and veggies simmered in water) and lots of fresh veggies plus the meat from 1 baked chicken.

Recipe Ingredients for Homemade Chicken Veggetable Soup

2 med Rutabagas
4 Zucchini
2 cup Spinach Leaves
2 Onions
10 Carrots
2 chicken breast
2 chicken drumstick
5 cups celery
30 cups chicken stock

Recipe Directions for Homemade Chicken Veggetable Soup

  1. Make the chicken stock by simmering a baked chicken carcass in water with whatever leftover veggies you have in the fridge that arent going into your finished soup. I used a combination of veggies much like what went into the finished soup but minus the spinach. I simmered for 2 hours and it turned out great.

  2. Drain the chicken stock into a big bowl or pot using a colander to strain out the bones and veggies, these you throw away.

  3. Put the stock into the pan you are cooking the soup in.

  4. Chop your veggies as you please, size only affects the cooking time.

  5. Put the veggies into the hot stock according to cooking time, carrots take longer to cook than celery for instance.

  6. (I just dumped them all in at once cause I didnt care and didnt have time)

  7. Either put the chicken meat in now or you can put it in at the end.

  8. Cook for about 30 minutes on medium heat or until veggies are to your desired done-ness.
