This is made with two chicken carcasses after the skin, most fat, legs and breasts have been removed. When cooled, the bones can be stripped of all meat and should give aprox the 2 cups in the recipe. Some add a tomato to this as well.

Recipe Ingredients for Homemade Chicken Vegetable Soup

2 small Onion
2 medium Carrot
2 small potatoes
1 medium turnip
1 cup Parsnips (about one medium)
3 stalk celery
2 cup chicken, cooked, skinless (this would be the remainder of the chicken removed from the carcaus after cooking)
3 clove Garlic
8 cup Water
1 oz Bay Leaves
1 cup Dill, fresh
1 Salt to taste

Recipe Directions for Homemade Chicken Vegetable Soup

  1. Remove skin, breasts and entire legs from two carcasses. Place bones into soup pot

  2. Clean vegetables, removing peel where appropriate. Leave them as whole as possible and place them, as well as spices and water, into the pot with the bones.

  3. Bring to a boil then turn down to simmer until all vegetables are done to taste. Adjust seasoning as desired.

  4. Set aside bones and vegetables to cool.

  5. Cut vegetables into bite sized pieces and return to stock.

  6. Strip off meat from bones and shread into small pieces then return them to pot.

  7. Reheat soup just before serving.
