A delicious chicken soup with ample veggies and delicious brown rice.

Recipe Ingredients for Homemade Chicken Soup

3/4 lb dark chicken meat
3 medium carrots
3/4 c chopped celery
40 oz chicken stock
1/2 c brown rice

Recipe Directions for Homemade Chicken Soup

  1. Cook 1/2 c. brown rice in 1 1/4 c. chicken stock. This will take about 35 minutes. Use a large pot so you can add your other ingredients without dirtying an extra pot.

  2. During this time, chop your veggies and chicken. I used some leftover drumstick meat from a roast chicken I made earlier in the week.

  3. Add onion or other veggies if you like.

  4. Add all of your other goodies and chicken stock to taste. The rice REALLY soaks up the stock, so add more than you think you need, or be prepared to add more later.

  5. Simmer on a low heat for 30-40 minutes.
