A light chicken soup that is low fat and quick to make.

Recipe Ingredients for Homemade Chicken Soup

3 tomatoes
1 onion
1 chicken breast
1/2 zuccini
2 small carrots
3 cloves of garlic
1 tablespoon extra virgin olive oil
750 ml chicken stock

Recipe Directions for Homemade Chicken Soup

  1. peel and grate the carrots & zuccini

  2. peel and chop the tomatoes

  3. Crush the garlic

  4. peel and chop the onions

  5. Heat the oil in a saucepan.

  6. Saute the grated vegetables and onions.

  7. Then add the stock, chicken pieces and tomatoes.

  8. Being to the boil and simmer for about 15 - 20 minutes.
