Delicious homemade chicken pot pie recipe

Recipe Ingredients for Homemade Chicken Pot Pie

54 g refrigerated pie crusts
2 lbs. Russet potatoes, unpeeled and cut into 1-inch chunks
3 cloves garlic, minced
1/2 cup chicken broth
1 cup frozen peas and carrots
1 cup frozen corn
24 ozs cooked rotisserie chicken, shredded
1 salt and pepper to taste

Recipe Directions for Homemade Chicken Pot Pie

  1. Preheat oven to 375 degrees. Unfold one pie crust into a 10-inch pie plate. Set aside.

  2. Place potatoes in a large saucepan. Add enough cold water until potatoes are covered by an inch. Bring to a boil, then allow to cook until tender when pierced with a fork, about 15 minutes. Drain and return to saucepan. Add garlic and chicken broth. Mash potatoes.

  3. Stir in remaining ingredients. Season with salt and pepper. Unfold one pie crust into a 10-inch pie plate. Mound potato and chicken mixture into pie crust. It's okay if the mixture is high. Unfold second pie crust on top. Crimp edges. Cut 3-4 slits in the top of the pie to allow steam to escape.

  4. Cook in preheated oven 20 minutes or until browned.

  5. Serves 8.
