Homemade Chicken Pot Pie. Cheese is optional. I use one packet of the powdered cheese that comes with mac-n-cheese. This recipe makes 10 hefty servings. Low Calorie & Filling!! (At 195/- calories per serving you could prepare and eat half the dish for only about 1000 calories or less, depending on your variations)

Recipe Ingredients for Homemade Chicken Pot Pie

1 can corn
1 can peas
1 can green beans
1 can cream of mushroom
1/8 cup flour
10 biscuit
1 cup low-fat shredded cheese, optional
12 oz boneless skinless chicken breast

Recipe Directions for Homemade Chicken Pot Pie

  1. Drain contents of all canned products. Add Cream of Mushroom and mix all ingredients.

  2. I boil the chicken until done. I then take 1/2 cup of the chicken broth (-fat)Add one packet of powdered cheese(If using shredded you can add to mixture at any time)I actually use 3 tablespoons of flour; this is just according to if you like yours juicy or cream. I whisk these ingredients together and then add it to my canned goods and mix good after dicing/adding the chicken.

  3. Typically I bake the ingredients, as desired, prior to addimg the biscuits to the top of the mixture. I use the canned biscuits that are 25 calories each. Sometimes I cut the biscuits in half and only use 5 biscuits (I am not much on bread). I always adapt the recipe to the number of biscuits/contents used for accurateness. Once biscuits are added; bake as recommended on package or as desired.

  4. I usually bake my contents at 250-300 degrees for about 30 minutes or so before adding the biscuits, stirring frequently until biscuits are added.

  5. ***I have never timed the dish...just watched it depending on the temperature I bake it at.
