Recipe Ingredients for Homemade Chicken Pot Pie

1 1/4 pound chicken breasts
2 teaspoons pepper
1 tablespoons olive oil, divided
1 small onion, chopped
2 celery stalks, chopped
1 medium potato, cubed
2 cups frozen mixed vegetables
2 cloves garlic, minced
1 1/2 cups low-fat milk
2 tablespoon low fat cream cheese
1/3 cup whole wheat flour
2 cups low-sodium chicken broth
1 tablespoon dried parsley
2 teaspoons dried thyme
200 g puff pastry

Recipe Directions for Homemade Chicken Pot Pie

  1. Heat the oven to 400 degrees F and arrange a rack in the middle.

  2. Spray 9x9 baking dish with cooking spray.

  3. Season the chicken with 1/4 teaspoon salt and a few turns of pepper. In a large nonstick skillet, heat 2 teaspoons of the oil over a medium-high heat. Add the chicken to the pan and cook for 5 minutes, turning once. Transfer the chicken to a plate.

  4. Add 2 more teaspoons of the oil, the leeks, and the celery to the pan and cook until vegetables begin to soften, about 3 minutes. Add the potatoes, green beans, garlic, and remaining salt and pepper and cook for 2 more minutes.

  5. Add the milk to the pan. Stir the flour into the chicken broth until dissolved and add to the pan. Cook, stirring, until the mixture comes to a boil. Reduce the heat to medium-low. Cover and simmer, stirring occasionally, for 10 minutes. Stir in the reserved chicken, peas, parsley, and thyme. Spoon the mixture into the prepared baking dishes.

  6. Whisk egg together with 2 teaspoons water and a pinch of salt until evenly mixed. Set aside.

  7. With kitchen shears, cut dough to fit over the baking dish. Place dough over filling and tuck into the edges of the dish. Brush dough with egg wash and cut slits in the top to vent. Place on a baking sheet and bake until crust is golden brown and mixture is bubbling, about 25 to 30 minutes. Let sit at least 5 minutes before serving.
