  1. 1. Start with a whole chicken in a large pot, add 10 cups of water, 2 carrots, 2 onions, 2 celery stalks, 10 peppercorns, 4 bay leaves. Bring everything to a boil, then reduce heat and simmer 1-2 hours.

  2. 2. Remove chicken and set aside. Strain liquid and RETAIN LIQUID (chicken stock), discard solids.

  3. 3. Sautee onions and carrots in heated olive oil.

  4. 4. Add chicken stock. Bring to a boil.

  5. 5. Add frozen peas. Bring to a boil.

  6. 6. Add egg noodles. Reduce to simmer.

  7. 7. Separate chicken, discarding bones, skin. Retain meat. Dice chicken and add to soup.
