Easy and quick; made with plenty of vegetables.

Recipe Ingredients for Homemade Chicken Noodle Soup

3 cups boneless, skinless chicken breasts, boiled and chopped
1 tbsp olive oil
3 stalks celery, chopped
2 cups carrots, chopped
1 yellow squash, chopped
1/2 large onion, chopped
1 clove garlic
32 ounce chicken broth, fat free
2 ounces angel hair pasta, broken

Recipe Directions for Homemade Chicken Noodle Soup

  1. Boil chicken breasts while preparing vegetables.

  2. Add olive oil to a large soup pot and saute celery, carrots, garlic, onion, and squash.

  3. Pour in chicken broth and broth from boiled chicken breasts into pot. Chop chicken and add to soup.

  4. Add 1 bay leaf, freshly ground pepper, parsley, and favorite all purpose seasoning (I use "Jim Baldridge's Secret Seasoning").

  5. Bring to a boil, reduce heat and simmer on low for at least 30 minutes.

  6. About 5 minutes before serving time break pasta in half and add to soup. Stir and simmer until pasta is cooked.
