Homemade Chicken Noodle Soup Recipe

I boil the carcass of a roasted chicken to start. Measurements are odd because I used my new kitchen scale. Homemade noodles make it good! Chiles add a nice kick.

Recipe Ingredients for Homemade Chicken Noodle Soup

8 cups water
2 3/20 oz. celery, chopped
4 17/20 oz. carrots, peeled and sliced
4 1/2 oz. onions, chopped
9/10 oz. jalapeno, chopped
5 1/5 oz. tomatoes, diced
4 3/4 oz. cabbage, shredded
7 17/20 oz. potato
9/10 oz. green chile
1 cup chicken broth, less-sodium
11 7/10 oz. chicken
1 tbsp. dried basil
1 egg
2 tbsp. water
1/2 c. unbleached flour
1/4 c. whole wheat flour
1/8 tsp. salt
1/2 tsp. pepper
1/2 tsp. salt

Recipe Directions for Homemade Chicken Noodle Soup

Boil carcass of chicken in water; then remove from water and add chicken broth and chopped vegetables. Simmer until tender. Take any chicken off carcass and add leftover chicken. While that is simmering, make noodles. Mix egg and water and then add flour and mix until dough is still tacky. Hold back some flour to use on counter to roll out. Roll out to preference (some like flatter noodles, some like fat). Cut in strips. Add noodles after vegetables are tender and boil just a few minutes.
