Vegetable soup base with chicken and pasta added

Recipe Ingredients for Homemade Chicken Noodle Soup

9 ounces chicken breasts
4 stalks celery
1/2 onion
6 oz. baby carrots
16 ounces diced tomatoes with juice
64 oz. low salt chicken broth
1 clove garlic
1 tablespoon olive oil
4 ounces angel hair pasta

Recipe Directions for Homemade Chicken Noodle Soup

  1. Saute fresh vegetables in olive oil

  2. Salt lightly

  3. Boil chicken separately and when cooked dice and add to pot

  4. Add canned tomatoes

  5. Season with salt, pepper, cilantro and mexican spices

  6. I then freeze half of the soup. To the other half add 2 ounces of angel hair pasta that has been broken in half. Cook pasta in soup and serve.Can top with sprinkle of monterrey jack shredded cheese or toasted corn tortillas.
