This is a homemade chicken noodle soup that is to die for! The recipe is very simple, and never needs tweaking. The liquid fat from the poached chicken is generally not strained (when chilled obviously) but all fat is removed from the chicken along with the skin and bones when the chicken has been cooled.

Recipe Ingredients for Homemade Chicken Noodle Soup

36 oz whole chicken
1 gallon of water
12 Wyler's chicken bouillon cubes
1 1/2 onion, halved
7 carrots, sliced
7 stalks celery, sliced
5 cloves garlic
8 oz egg noodles

Recipe Directions for Homemade Chicken Noodle Soup

  1. Place raw chicken and water in a large pot over high heat and bring to a boil with 1 1/2 onions , 4 carrots, 4 celery, and 5 cloves of garlic. Reduce heat, cover and simmer for 3 hours. Note: the 4 carrots and celery are in ADDITION to the 7 carrots and 7 celery listed in the recipe, the 7 and 7 are what are sliced and added in the end.

  2. Strain broth and reserve chicken, discard the vegetables. When chicken is cool enough to handle, remove skin, bones and fat and shred meat into bite-size pieces.

  3. Return strained stock to pot over high heat, and stir in chicken bouillon cubes, shredded chicken, chopped celery and chopped carrots. Bring to a boil, then reduce heat, cover and simmer 15 minutes, or until carrots are tender.

  4. boil the egg noodles separately and added to each bowl as desired.
