Recipe Ingredients for Homemade Chicken Noodle Awesome Soup

1/2 cup chopped onion
1/4 cup scallions
1/2 cup chopped carrots
1/2 cup chopped celery
1/2 garlic clove, minced
1 teaspoon olive or canola oil
2 tablespoons all-purpose flour
1/4 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon poultry seasoning
3 1/2 cups reduced-sodium chicken broth
2 cups diced peeled potatoes
1/2 teaspoon salt
1 3/4 cup diced roasted chicken breast
1/4 c. corn
1/2 c. broccoli
2 oz. pasta
1/2 cup fat-free evaporated milk

Recipe Directions for Homemade Chicken Noodle Awesome Soup

  1. sautee all veggies, except potato first in the bottom of a large panfor five minutes or until tender

  2. add flour, thyme, oregano to veggies, sautee another minute

  3. gradually add broth and potatoes, boil then simmer for another 15-20 min or until potatoes are tender

  4. add chicken and pasta then simmer for another ten minutes until noodles are tender

  5. when noodles are done, reduces heat, add milk, heat until warm but do not simmer or boil

  6. serve
