Salad can be placed on a bed of lettuce or on bread. You can also add onion, cucumber, peppers or other vegetables.

Recipe Ingredients for Homemade chicken breast salad

1.33 lbs. chicken breast, skinless, boneless
2 T. low fat mayonnaise (Smart Balance)
5 celery stalks, cut
2 baby carrots

Recipe Directions for Homemade chicken breast salad

  1. Cook chicken cutlets (bake, or saute in non-stick pan) until cooked thoroughly. Add herbs & spices to taste.

  2. Let chicken cool or place in refrigerator until cold.

  3. Cut chicken into small pieces.

  4. Cut celery into small pieces.

  5. Cut carrots into small pieces.

  6. Add all ingredients in a bowl and stir.

  7. Place one cup of mixture into four separate containers on top of lettuce.

  8. Add seasoning or dressing as you like.
