homemade chicken soup w/ beans and orzo pasta... very easy, mostly from canned goods.

Recipe Ingredients for Homemade chicken and bean/noodle soup

4 cups low sodium chicken broth
4 cups water
1 cup butter beans
1 cup kidney beans
2 cups carrots
1/2 red onion
1 cup chicken
1 cup orzo
1 cup diced tomatoes

Recipe Directions for Homemade chicken and bean/noodle soup

  1. Season 2 chicken breasts w/ pepper and cumin

  2. Saute chopped garlic and chopped red onion

  3. Meanwhile heat up 2 cans low-sod chicken broth and 4 cups of water

  4. Drain butter beans, kidney beans, canned carrots and diced tomatoes then add to pot w/ broth

  5. add 1 bay leaf and dried thyme, italian seasoning and sage (about 1 tspn each)

  6. once chicken is mostly cooked add to broth and heat through to simmer

  7. about 10 min before add pasta and when cooked through soup is done
