Yummy homemade cheesecake made with neufchatel cheese instead of cream cheese, which has 1/3 the fat content.

Recipe Ingredients for Homemade Cheesecake

1 pint sour cream
24 ounces neufchatel cheese
1 cup sugar
1 tsp vanilla
2 eggs

Recipe Directions for Homemade Cheesecake

  1. Preheat oven to 350 degrees.

  2. Butter bottom and sides of spring form pan. *Note: You can use a 10 inch pre-made graham cracker crust, however there will be mix left over and I prefer to not use any crust at all. Instructions are the same for both.

  3. Allow neufchatel cheese to soften.

  4. Mix all ingredients on medium bowl, mix on high at least 3 minutes.

  5. Pour into pan (or crust) and cook at 350 50-60 minutes until cake is golden yellow on top. Allow to cool in oven 1 hour. Set in fridge at least 3 hours (overnight is best).

  6. Yum!
