Recipe Ingredients for Homemade Celery Soup

10 stalk, large (11"-12" long) Celery
2 medium raw Potato
1 medium (2-1/2" dia) Onions
1 Serving Vegetable Stock

Recipe Directions for Homemade Celery Soup

Chop entire celery plant, including leaves. Dice potatoes and onion. Bring water to the boil on the stovetop. Add vegetable stock. Add celery, onion and potato. Simmer on a low heat for 45 minutes. Remove from stovetop and allow to cool for 15 minutes. Use a stick blender to puree until soup reaches you desired consistency
