Very nice Vegetarian soup but should probably look for something to replace the Carnation coconut milk if wanting to save calories.

Recipe Ingredients for Homemade Cauliflower & Broccoli Soup

1 clove Garlic crushed
1000 grams Cauliflower florets
1 large Onion diced
100 grams Carrots chopped
200 grams Potato, Flesh And Skin chopped
8 cup (8 fl oz) Water
100 grams Celery chopped
3 Cube Vegetable Stock Cubes
30 grams Maggi Real Coconut Milk powder
1 serving carnation light and creamy coconut flavoured evaporated milk

Recipe Directions for Homemade Cauliflower & Broccoli Soup

  1. Gently soften crushed garlic, chopped onion and chopped celery over a moderate heat. Do not brown.

  2. Add 2 litres of water and stock cubes (adjust to your own taste) - or use premade stock.

  3. Add remaining vegetables.

  4. Bring to the boil and reduce to a simmer.

  5. When vegetables are soft allow to cool slightly then blend / bamix.

  6. Add Carnation coconut flavoured milk (if desired).
