Makes 1 serving

A classic European afternoon snack.

Recipe Ingredients for Homemade Bruschetta

1 slice french bread, toasted
1/6 cup Kirkland pesto
1/2 cup Roma tomatoes, sliced
1 slice white cheddar

Recipe Directions for Homemade Bruschetta

  1. Take out the white cheddar and pesto, and allow them to come to room temperature. This releases the natural flavors in the cheese and herbs.

  2. Finely slice the french bread. In the tradition of Italy, you may want to use day-old bread, which is naturally crunchier.

  3. Use a hot griddle to gently sear one side of each slice. A toaster may be used instead, but be careful to keep a close eye on it, as french bread burns quickly.

  4. Use a spreading spoon to add a generous layer of pesto to the non-seared side of the bread.

  5. Wash and chop the Roma tomatoes hamburger style, with roughly four slices per tomato, and one tomato per serving.

  6. Press the tomato slices gently into the pesto so they set. This prevents slipping while your guests are trying to eat it.

  7. Slice your white cheddar moderately thin (approx 2-3 mm). Top your bruschetta with it to complete this delicious midday snack.
