In addition to ingredients, I freeze all the parts of veggies that I don't use when I am cooking - beet tops, celery tops, onion roots and skins, etc. - and add what ever I have. Use like the vegetable stock you buy in a can or box.

Recipe Ingredients for Homemade Broth

14 cups water
2 cups fresh chopped celery, with leaves
1/2 cup chopped parsley, fresh, coarsely
1/4 tsp black peppercorns
3 medium carrots, quartered
1 cup fresh sliced parsnip
1 large onion, quartered
1 lb spinach

Recipe Directions for Homemade Broth

  1. Add all ingredients together in a large stockpot or Dutch oven and bring to a boil. Partly cover, lower heat, and continue to cook for 2 hours, keeping at a low simmer.

  2. I usually add everything to a crockpot after dinner and set in on low overnight.

  3. Drain liquid into a colander with a large storage bowl underneath. Dispose of vegetables. Wrap and refrigerate, or use immediately.

  4. Can be made at anytime and kept on hand for up to 2 weeks in refrigerator or up to 6 months in freezer.
