1100 grams bread flour
20 grams salt
650 grams water
1/2 grams yeast

Recipe Directions for Homemade Bread (Tartine)

  1. Measure 200 grams starter (yeast, 100 g flour, and 100 g water), mix with 80 F water 700 grams.

  2. Mix into 1 kg of bread flour

  3. rest 30 min

  4. mix salt and 50 g water into dough

  5. Rest 2-3 hours - TURN every 30 minutes,

  6. Flour and split rest 30 min

  7. form Into 2 loaves

  8. Rest for 2-3 hours

  9. Heat oven 500F put COMBO COOKER in oven as heats.

  10. Careful pan is HOT.

  11. Put bread in combo cooker score top.

  12. Cook in COMBO 20 min 425F

  13. take off lid cook 20 min 425F.

  14. Golden Brown!!!

  15. EAT!!!
