Recipe Ingredients for Homemade Bread

3 cups warm water
1 1/2 tablespoons yeast
1 1/2 tablespoons kosher salt
6 1/2 cups all purpose flour

Recipe Directions for Homemade Bread

  1. Add yeast and salt to water. No need to worry about dissolving it.

  2. Mix in flour, no kneading necessary. Mix until uniform. Dough should be wet and loose enough to conform to the shape of the container.

  3. Put in 5 quart container with lid but not air tight. I put holes in the lid of a 5 quart ice cream bucket.

  4. Let rise 2 hours. Longer rising times, up to 5 hours, will not harm the result. It says to refrigerate to make it easier to handle.

  5. Sprinkle corn meal on whatever it's going to rise on. Cookie sheet, pizza peel. It doesn't get very big, so don't sprinkle the whole cookie sheet. It will just burn.

  6. Sprinkle surface of dough with flour. Pull up and cut off dough the size of a grapefruit with a serrated knife.

  7. Hold dough in your hand and add a little more flour so it won't stick to your hand. Gently stretch the surface of the dough around to the bottom on all four sides, rotating ball a quarter-turn as you go. Most of the dusting flour will fall off and is not intended to be incorporated into the dough. The bottom of loaf may appear to be a collection of bunched ends, but it will flatten out and adhere during resting and baking. Process should take no more than 30 to 60 seconds.

  8. Place on cornmeal coated surface and let rest for 40 minutes. No need to cover.

  9. Twenty minutes before baking preheat oven to 450 with baking stone on middle rack. Use an oven thermometer to verify temp.

  10. Place empty tray for holding water anywhere else in the oven.

  11. Dust the top of the risen loaf with flour and slash. Your oven won't be to temp yet, but slide dough onto stone and quickly pour 1 cup hot tap water in pan and quickly close door to oven.

  12. Bake for 30 minutes until crust is nicely browned.

  13. Cool on wire rack. Don't slice till completely cooled.
