A great way to use up cucumbers from your garden! This recipe is delicious!! You will need canning jars and lids. And a hot bath (big pot for heating up your canning jars). This is a 2 part recipe, and it wouldn't figure out the pickling salt, so you will also need 1/2 c. of canning and pickling salt (wal-mart) for the first part of the recipe.

Recipe Ingredients for Homemade Bread and Butter Pickles (Hot Bath)

4 quarts water
1 large onion
1 bell pepper
7 cucumbers, sliced
6 c. vinegar
6 c. sugar
1 tsp. celery seed
1 tsp. mustard seed
1 tbsp. turmeric
1 1/2 tsp. dill
1 1/2 tsp. pepper

Recipe Directions for Homemade Bread and Butter Pickles (Hot Bath)

  1. Step 1: Soak (First 4 ingredients, plus 1/2 c. of pickling salt) - Do NOT use regular salt!!

  2. Soak these ingredients (no heat) in a pot for at least 3 hours.

  3. Step 2: Brine (Next 7 ingredients) Add these items to a seperate pot and bring to a boil on the sotve (cover). Once boiling, remove from heat.

  4. Sterlize your lids and jars. Fill the jars with the cucumbers (use a slotted spoon). You only want the cucumbers, onion and pepper, not the water.

  5. After filling each jar full, add the brine to each jar until full. You don't want a lot of space between the lid and the brine or your lids won't seal. Place jars (with lids on) in hot bath for 20 minutes. Remove from hot bath and set on a towel and listen for the "pop" that says the jar sealed properly! Makes about 6 pints.
