375 grams Flour
90 grams Danish Butter Unsalted
220 grams Sugars, Granulated
1.25 cup Whole Milk
1 large Egg, Whole
200 grams Blueberries
60 grams Rolled Oats
15.1 grams Chia Seed
30 grams Quinoa

Recipe Directions for homemade blueberry muffins

  1. Preheat oven to 180C (160C fan-forced). grease muffin tray.

  2. Sift flour; rub in butter. Stir in lightly beaten egg, milk, oats, chia and quinoa, being careful not to over-mix. Mixture should still appear lumpy.

  3. gently stir in berries and spoon mixture into muffin tray.

  4. bake for approx 20 min or until slightly brown on top.
