Recipe Ingredients for Homemade blueberry muffins

1 3/4 cup flour
1/3 cup sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 egg, beaten
3/4 cup rice milk
1/4 cup canola oil
3/4 cup blueberries

Recipe Directions for Homemade blueberry muffins

  1. Line a twelve-cup muffin pan, if using wilton pan liners spray or brush with canola oil; set aside. In a medium mixing bowl combine flour, sugar, baking powder and salt. Make a well in the center of the dry mix.

  2. In another mixing bowl combine egg, milk, and oil. Add all at once to the dry mixture. Stir until just moistened.

  3. Fold in blueberries.

  4. Spoon batter into prepared muffin cups, filling each 2/3 full. Bake in a 400 degree oven for 20 minutes or until golden. Cool muffins in cups for 5 minutes on a wire rack. Remove from muffin cups and serve warm. Makes 12 muffins.
