Recipe Directions for Homemade Blueberry Flaxseed Waffles

  1. Whisk flour, sugar, baking powder, baking soda, and salt in medium bowl to combine. Pour milk and yogurt 2-cup measuring cup. Mix yolk with melted butter, then beat into milk mixture until well blended. Whisk egg white in large bowl to stiff peaks. Make a well in center of dry ingredients in bowl; dump wet ingredients into dry ingredients all at once and whisk gently until just combined (a few lumps should remain). Do not over mix. Quickly, but gently, fold egg white into batter. Add blueberries and gently fold again.

  2. Meanwhile, heat a waffle iron medium-high heat. Lightly spray waffle iron with nonstick cooking spray.

  3. Ladle 3/4 cup batter onto waffle iron for each waffle and cook until done.
