My Aunt Peggy's delicious and (mostly) nutritious soup! I didn't list a number of servings because it varies depending on how much of each ingredient you want.

Recipe Ingredients for Homemade Beef and Veggie Soup

1 NLEA serving Carrots, Baby
1 cup Beans, Snap, Green
1 serving ( 3 oz ) Beef, Ground, 80% Lean Meat / 20% Fat, Crumbles
1 cup, diced Celery
1 cup Corn, Sweet, Yellow
1/2 cup, shredded Cabbage
1 serving Tomato Juice from Concentrate
1/2 cup Diced Tomatoes
1 large (3" to 4-1/4" dia.) Potatoes, Boiled

Recipe Directions for Homemade Beef and Veggie Soup

  1. Cook your beef first, pan brown.

  2. Drain your veggies and then dump them, along with the tomato juice, into a stock pot. Add maybe a cup or two of water, depending on how watery you like it.

  3. Begin cooking your veggies and what not in the tomato/water.

  4. Add beef.

  5. Cook until veggies are as tender as you prefer them.

  6. Serve.
