This was originally a very yummy veggie burrito recipe, but we like to add ground beef too. Seasonings are estimates, adjust to taste.

Recipe Ingredients for Homemade Beef and Veggie Burritos

415 gram lean ground beef, cooked
1 cup onion, chopped
1 cup green pepper, chopped
2 cloves garlic
1/2 cup red pepper chopped
2/3 cup zucchini, chopped
200 gram carrot, grated
28 oz refried beans
14 oz kidney beans, drained and rinsed
1/4 cup corn
13 10" flour tortilla
150 gram cheddar cheese, grated

Recipe Directions for Homemade Beef and Veggie Burritos

  1. Brown beef, drain and set aside.

  2. Saute onion for 3 minutes in a large pan. Add garlic peppers, zucchini, carrot and saute for another 3 to 5 minutes.

  3. Return beef to pan, mix in beans, corn and seasonings, and heat through.

  4. Preheat oven to 350 degrees (F).

  5. Scoop a reasonable amount of mixture into flour tortillas, roll up and place on lightly greased pan.

  6. Sprinkle grated cheese on top and put rolled burritos into oven for 15 minutes.

  7. Serve with sour cream and salsa.
