1 bell pepper
1 red onion
1 eggplant
1 large carrot
1 roma tomato
4 cups water
3/4 cup hot salsa
2 tbsp oil

Recipe Directions for Homemade Beef Stew

Chop all ingredients. Mix seasoning with water or chicken stock, and add to slow cooker. Cook on high for 4 hours or low for 8 hours.
